Recipe: Pineapple Salsa Salmon – Quick & Easy Dinner

Summer is finally at our doorstep and we couldn’t be more excited to break out the seasonal flavors that come with it. Our new pineapple salsa is a crowd favorite and now you can make it a part of your weekly dinner routine! SALSARITA’S PINEAPPLE SALSA SALMON

  • Pineapple Salsa (16oz)
    *Order Online or pick up a pint in store made fresh, in house, every day!*

  • Fresh 4-6oz Salmon fillets (we used two for two servings)
  • Salt
  • Pepper
  • 2 tbsp chopped green onions
  • 1 tbsp vegetable oil
  • Teriyaki (Store bought or you can make your own – recipe here)
  • Riced cauliflower (optional) 

First, season the salmon fillets with salt & pepper. Heat the vegetable oil in a nonstick pan over high heat. Sear the salmon with skin side up first, cooking around 4-6 minutes. You should sear the salmon on one side until it has a nice light brown crust. Flip to the other side and cook until salmon is completely opaque and light pink.

Add the teryaki sauce to the salmon (we found that covering the fillet works better than an actual measurement). Add the green onions and pineapple salsa to the top of the salmon. Serve immediately with steamed cauliflower rice, brown rice, or your choice of grain.
